My 9 month old has proven that age old poem to be true, but she loves her beans, so how can I deprive her of their deliciousness?
We love beans here at our house. My favorite beans are black beans and the small white beans. And chickpeas if those count as beans.
We celebrated this holiday in two different ways at our house today: the 9 month old ate a whole bunch of black beans like they were candy, and my husband and I ate some black bean and corn pasta. Delish!
Black Bean & Corn Pasta
1 box Shell Pasta (or any shape – we used Shells & Wagon Wheels)
1 can Black Beans
1 cup Frozen Sweet Corn
2-3 Chicken Breasts, cut up (optional)
2 cups Tomato Sauce
Directions: Cook Chicken if you’re using it or you can use leftover chicken, toss in beans and corn, add however much of the sauces you like, mix with cooked pasta.
This recipe can’t be screwed up. It’s foolproof, fast, and delicious. You can really be creative and throw anything into this pasta.
