I know that, for a lot of people, this is what they think of when they hear “macaroon”:
Those are French macarons, and they are delicious. But I’m Jewish, so for me, macaroons will always be those little coconut cookie thingys that we eat during Passover.
According to Wikipedia, “Italian Jews later adopted the cookie because it has no flour or leavening (macaroons are leavened by egg whites) and can be enjoyed during the eight-day observation of Passover. It was introduced to other European Jews and became popular as a year-round sweet.”
I ate chocolate ones for today because yum.
My verdict? I love macaroons. I feel like coconut it one of those really polarizing flavors. You either love it or hate. I definitely love it. I love the way it tastes and smells and I also love to use coconut oil for everything. So, yeah, I like today’s holiday.
