Unlike my last major fail at celebrating a cherry holiday, I actually found cherries for today’s special day!
Fresh cherries are still super expensive, but my local grocer finally had frozen cherries.
I made an impromptu bowl of something, just to mostly feature the cherries. I added some oats and salted butter to the cherries, heated them, and then added coconut cream that I mixed with vanilla bean paste.
The saltiness of the butter was perfect with the coconut cream, and the cherries were actually very fresh tasting for frozen fair. Way to go, Shop Rite. Also way to go, me, for a yummy dessert that’s actually not unhealthy.
