Another food holiday designed to hurt my teeth. Sigh.
I’ve never made peanut brittle, but it was pretty easy. I didn’t have corn syrup, but I found this recipe, which is basically just sugar, peanuts, and vanilla.
I heat up the sugar, mixing it constantly.

My verdict? I’m not sure why, but I’m not the biggest peanut brittle fan. I like peanuts and this is basically just sugar-covered peanuts. But this was easy to make and only required 3 ingredients and about 6 minutes, so if you like peanut brittle, this is a good recipe to try.
