National Pumpkin Day

I am going to keep my post short because I woke up with a full-blown cold and it is kicking my butt. I will say that this is my favorite day because it gives me an excuse to make pumpkin bread!  I followed this recipe and I have made this bread once before.  It was a huge hit the last time, so I could not see how I could do wrong by choosing this recipe again. Here are some pictures

Verdict: This is absolutely delicious.  I know the recipe calls for a glaze on top, but instead I added chocolate chips to mine and sprinkled walnuts on top of just one of the breads.  Everything is better with chocolate! I had a piece last night when it was still warm and a piece this morning for breakfast.  This bread makes my belly happy.  I did run into a snag though. In the morning, the middles of the breads kind of sunk inward.  Sad I know, but it doesn’t make them any less delicious.  Give this a try, or just come and steal some of mine because I have plenty!
