National Noodle Day

Noodles are the best food. I could eat noodles every single day of my life. Tonight, Alex and I celebrated National Noodle Day by making fusilli noodles with a delicious Butternut Squash sauce. I can’t take any credit for this though, because Alex cooked all of it (Alex cooks dinner for us most nights, so I’m especially looking forward to November 6th).

It started by me asking Alex if we could make the “fun noodles” because fusilli is the most fun shaped noodle.

Alex cut up the butternut squash right when he got home from work because it needed to roast for about a half hour.

My one contribution to tonight’s dinner was cutting up an onion and some garlic and sautéing them. Once the butternut squash was done roasting, we threw that in the pot with the onions and garlic, let it cook for a little and then used our emersion blender to puree to create the sauce.

While the butternut squash was cooking with the onion and garlic, we put water up to boil for the noodles.
